I think these recipes sound good, but I have never tried them, so no guarantee.  Let me know if you make any of em.  Feel free to give me some if you do!

Banana Nut Bread

Serving Size : 10

2 cups Flour
1 teaspoon Baking soda
1/2
teaspoon Salt
1/2 cup Butter
1 cup Sugar
2 Eggs
1
teaspoon Vanilla
1 cup mashed banana - about 3 pieces
1/3 cup Milk or Buttermilk
1 cup Nuts chopped (optional)

Cream together butter and sugar.
Add banana, eggs, and vanilla.
Sift together dry ingredients.
Add alternately with milk.
Blend well.
Stir in nuts, and pour into a greased and floured loaf pan.
Bake at 325 degrees for 1-1/4 hours.

This recipe can also be used to make banana nut muffins or as a banana nut cake.

Banana Chocolate Chip Muffins

Ingredients:
2 large bananas, ripe
2/3 cup sugar
2 large eggs
6 tbsp butter, melted
1 tsp vanilla extract
2 cup flour
2 tsp baking Soda
1/4 cup buttermilk
2/3 cup semi-sweet chocolate chips
1/2 cup pecans, chopped

  1. Preheat oven to 350F.
  2. In a medium bowl, mash bananas with a fork. Add sugar and eggs and mix well. Stir in melted butter and vanilla. Add flour, baking soda, and buttermilk. Stir with a fork just enough to combine. Stir in chocolate chips and pecans.
  3. Spoon batter into 12 paper-lined 2 3/4-inch muffin cups, filling almost full.
  4. Bake 20 to 22 min, or until golden and a cake tester inserted in center comes out clean.
  5. Let muffins stand 5 minutes, then transfer to racks to let cool completely.

Chocolate Peanut Butter Fudge

   Amount  Measure       Ingredient -- Preparation Method
--------  ------------  --------------------------------
    4 1/2  cups          sugar
      1/4  pound         butter
    1      can           (12 oz.) evaporated milk
    1      dash          salt
   12      ounces        chocolate chips
    7      ounces        marshmallow cream
      1/2  cup           peanut butter
    1      teaspoon      vanilla

Bring to a boil:  sugar, butter, evaporated milk and salt.  Boil 15 minutes. Re
move from heat.  Add chocolate chips, marshmallow creme, peanut butter and vanilla.  Beat until thick.  Pour into 13 x 9 inch pan.  Refrigerate.

CHOCOLATE-CHIP PEANUT BUTTER FUDGE

   Amount  Measure       Ingredient -- Preparation Method

    2       c            Granulated sugar
      2/3   c            Milk
    2       tb           Light corn syrup
    1       tb           Butter
    1       t            Vanilla
      1/2   c            Peanut butter
    1       c            Milk chocolate chips

   Combine sugar, milk and corn syrup in a heavy saucepan
   (3 quart); bring to a boil, stirring constantly, until
   mixture boils.  Continue boiling without stirring to
   the soft-ball stage (234 F).  Remove from heat.  Add
   butter, without stirring, and cool to lukewarm (110
   F). Add vanilla and peanut butter; beat until mixture
   begins to thicken and lose its gloss.  (Watch
   carefully, this fudge has a short beating time.)
   QUICKLY add chocolate pieces, and turn into buttered
   8x8x2-inch pan.  While warm, mark into squares.  Cool
   until firm, then cut as marked.

Never Fail, Five Minute Fudge

2/3 c. un-diluted, evaporated milk 1/4 tsp salt
1 tsp. Vanilla 1 Pkg (6 oz.) Chocolate chips
1 2/3 c. Sugar 1 1/2 c. diced marshmallows (16 med.)
1/2 c. chopped nuts

Mix evaporated milk, sugar and salt in saucepan over medium heat.   Heat to boiling, then cook 5 minutes, stirring constantly.   Remove from heat.  Add marshmallows, chocolate chips, vanilla and nuts.   Stir 1 - 2 minutes until marshmallows melt.  Pour into buttered 8 inch square pan.  Cool.   Cut into squares.
